About Drouin

Pays d'Auge and Domfrontaise calvados. A range of vintage and blended calvados from both the Pays d'Auge and Domfrontaise with some AOC thrown in for good measure. Many of their brandies have quite high apple content and lower pear usage

Details

The taste of cider apples is prominent in this calvados. It has a drier flavour than other calvados from the Pays d’Auge where pear drop aromas are not so prominent

Additional Information

Aroma This has a dry almost musty apple aroma with no hint of pear as is normal with many calvados.
Distillation The firm still have one of the old mobile stills which they use but most is carried out on a Charentais Alembic of a medium size
Flavour Dry apple with a hint of dry sherry, there are some hints of sage and thyme.
Grape Variety Not a Grape but cidre made from apples and perry pear. The bitter/sweet apples are mainly picked and crushed in a membrane press to get the flavour from the skins. There are several varieties including Saint Martin, Noel des Champs, Mettais and Doux Normandie. The apples are small with high aromatic intensity
Viticulture Apples come from mainly bitter sweet apples on the traditional tall tree varieties
