About Paul Beau

Complex cognacs for the connoisseurs from the centre of Grande Champagne. The Beau cognac firm was started in 1895 by Samuel Beau, the father of Paul. Samuel died in 1914 and Paul and his wife who always proudly claimed to be a peasant took over. The estate grew in size but the emphasis has always been on ageing.

Details

The emphasis on ageing has worked well and this particularly fine 25 y.o.has developed a big complexity with aromas of orange peel, kumquats, guava, melon, dried nuts and much more. It's slightly higher strength of 43% enhances this cognac further.

Additional Information

Aroma This is a wonderfully complex cognac with a multitude of aromas. Initially there is a deep smell of kumquats and dried mandarin skins. The nose develops to nutmeg, roasted almonds, vanilla, coffee and melon but one can sit all day imagining all the delicious rich smells which mature in the glass.
Distillation Large 25 hectolitre stills. The firm has 4 which produces all their eaux de vie
Flavour Citrus flavours are the first to develop on the palate with a slightly spicy addition, this develops into dried almonds and a hint of marrow but still retaining an overall complexity of flavours.

Reduction and Strength Some gradual reduction is necessary but interestingly they do not reduce down to 40%
Viticulture Some of the finest chalk in the whole of Grande Champagne. Almost entirely Ugni Blanc
