Made on a 58 hectare estate in Jarnac Champagne owned by the Vallet Family for generations. The grapes are mainly Ugni Blanc but unusually it also has some Folle Blanche and Colombard. Aged for 10 years in oak barrels the aroma is predominantly apricots which comes out in the flavour along with vanilla, toffee and a little citrus.
Additional Information
| Aroma | A dominance of dried apricot and peaches |
|---|---|
| Distillation | 30 hlr capacity stills. Tulip shaped heads to minimise rectification |
| Flavour | Some nutty flavours, a little citrus. The dried peach comes out quite distinctly with vanilla and toffee |
| Grape Variety | 80% Ugni Blanc, also Colombard and Folle Blanche |
| Reduction and Strength | Eau de vie is mixed with distilled water, only small quantities are used as cellars are quite dry |
| Viticulture | The ground here is flat and the tiny vineyard where this originates in Grande Champagne is just over the Ne where many fine vineyards are found. The chalk here is probably Santonian being more compacted than on the slope to the north and the vines are a combination of Ugni Blanc, Folle Blanche and Colombard |
