We found this cognac in an old cellar, the owners of which ceased making cognac many years ago. The cellar was in the region of Salles d'Angles, on the western side of Grande Champagne.

Additional Information

Aroma A hint of vine leaves and jasmine with green walnuts, cedar, mangosteen and dry spice aromas
Ageing Small cellars of medium dampness in 350 litre LImousin oak barrels.
Distillation Normal Charentais still, probably around 15 - 20 hltrs The stills were quite old and of traditional shape and quite likely to be coal or wood fired.
Flavour Initially one detects toast, a hint of liquorice and truffle but it develops with pear, kumquat and grapefruit peel all mixed with cloves, mushroom and ginger.
Grape Variety Ugni Blanc possibly some Folle Blanche
Reduction and Strength No reduction
Viticulture Many people say that the chalk here is more porous and allows the vines better penetration to the underground streams ultimately leading to high quality grapes.
