This eau de vie is made from Nancy Mirabelle, a small yellow plum with pink speckles that’s sweet and fragrant with a honeyed taste. Nusbaumer’s Mirabelles come only from the orchards of Lorraines which benefit from an Appellation. It takes about 10kg of fruit to make a litre of eau de vie at 50%abv.

- Aroma:
- Very fragrant aromas of the ripe fruit.
- Ageing:
- After distillation it is aged in stainless steel barrels for seven years to obtain this unique roundness and finesse.
- Distillation:
- After a natural fermentation of five weeks, the stones are removed and the fruits are distilled in a traditional and artisanal way in one of their small copper stills.
- Flavour:
- Very refined, supple, with a taste of honey with a powerful bouquet of fruit.
- Reduction & Strength:
- At the end of the ageing period, it is reduced to 43% with water from Nusbaumer's mountain spring. This water, that passes through the schist bedrock, is of great purity and gives clarity of flavour.
- Viticulture:
- Located in Alsace in the heart of the Val de Villé.
