The Beaulon 12 y.o. has always surpassed the minimum age requirement for an XO. It is an ideal starter cognac for those learning about brandies and comes with a delicate complexity and wonderful balance.
|Aroma||Some floral tones, particularly violet. Nut and vanilla, some vine cane|
|Distillation||In both 12 and 25 hectolitre stills between 71 and 72 degrees. No water is added to the new eau de vie|
|Flavour||Some nutty flavours. There is some toffee and vanilla with a little oak, medium dry flavour|
|Grape Variety||Unusually, Colombard and Folle Blanche as well as the larger proportions of Ugni Blanc|
|Reduction and Strength||Eau de vie mixed with distilled water then aged in oak for c10 years before final blending. Only small quantities used as cellars are quite dry. No additives are used|
|Viticulture||Chateau de Beaulon produce eaux de vie from Ugni Blanc Folle Blanche and Colombard and allow the grass to grow between the vines|
