Ageing 350 litre casks, first in new and then in old Limousin oak casks.
Flavour The palate excels with pear, nutmeg, ginger, banana and saffron.
Grape Variety Ugni Blanc but possibly Folle Blanche too.
Reduction and Strength Some reduction has taken place to create its remarkably good balance and flavour.
Viticulture The land here is flatter that that of Grande Champagne and the chalk is slightly less porous.
