Distillation | There are 2 tulip shaped stills of 25 hltr. The firm distils on the lees and believe in making pure cognacs without the use of additives. |
Flavour | Hazelnut, cocoa and nutmeg. |
Grape Variety | Ugni Blanc and Colombard. |
Reduction and Strength | Gradual reduction with distilled water over several years. |
Viticulture | Chalky, thin soils give way to high limestone content from the surface down. Montmorillonite clay provides good structure and water reserve. |
