- Distillation:
- Alembic Charentais still and distilled traditionally on its lees.
- Flavour:
- Cocoa and dark toffee which are followed by delicious bouts of clove, almond, damson and candied citrus fruits.

- Ugni Blanc
- Reduction & Strength:
- Slightly reduced with distilled water to make the perfect balance.
- Viticulture:
- An area of gently sloping land with very porous chalk in several layers, allowing the vine roots to penetrate to a deep level.
