Castarede armagnacs are aged in the traditional way, in oak barrels made by local artisans. They are stored in new oak barrels, with a capacity of 400 litres, for a few years until the optimal dissolution of the components in the wood has occurred. The eau-de-vie is then transferred into older oak barrels for longer, slower ageing.

Aroma:
Yeasty aromas of peach and dried spices
Ageing:
All Castarede armagnacs are well aged in oak casks. The cellars are next to the Baise river ensuring that they are always damp.
Distillation:
Single distillation at around 58 – 60 degrees. This provides more complex aromas and taste
Flavour:
Kumquat, medlar, dried apple and crystalised peach.
Grape Variety:
Mainly Colombard.
Reduction & Strength:
Limited reduction with distilled water
Viticulture:
The climate is soft and humid with sunny autumns and the soil is made of siliceous clay which is poor in lime, giving Bas Armagnacs a lightness and fragrance with subtle tastes
